In 12 days, we harvest Château de Marsannay’s 40 hectares with 100 grape-pickers.
A meticulous sorting at the reception in the cellar allows to remove the roasted and the damaged berries to keep only the most beautiful logs. After partially destalking the grapes, the berries are put into thermo-regulated stainless steel vats for a perfect cold maceration and alcoholic fermentation. 11-12 months of ageing in new oak barrels (20%) as well as in oak barrels of one to two years, then 5-7 months in a tank
