In 12 days, we harvest Château de Marsannay’s 40 hectares with 100 grape-pickers.
A meticulous sorting at the reception in the cellar allows to remove the roasted and the damaged berries to keep only the most beautiful logs. After destalking all the grapes, the berries are put into vats for the cold maceration and then the alcoholic fermentation. 13 months of ageing in new oak barrels (25%) and in barrels of one to two years, then 3 months in a tank
